🍋 Pink Gin and Lemon Cupcakes – A Sweet Sip of Kells Gin in Every Bite! 🍓

There’s nothing quite like combining two of life’s greatest pleasures – gin and cake! These Pink Gin & Lemon Cupcakes are the perfect bake for springtime celebrations, afternoon tea, or just a little indulgent treat with your favourite cocktail in hand.

Infused with the zesty brightness of lemon and topped with a smooth, slightly boozy pink gin buttercream (featuring Kells Pink Gin, of course), this recipe makes 12 beautifully soft cupcakes that are as pretty as they are delicious.

✨ What You’ll Need


For the Lemon Cupcakes:

  • 125g unsalted butter (room temperature)
  • 175g caster sugar
  • 2 large eggs, beaten
  • Zest of 1 large lemon (juice reserved separately)
  • 175g self-raising flour, sifted
  • Pinch of salt
  • 4 tbsp milk
  • 70g icing sugar (for syrup)

For the Pink Gin Buttercream:

  • 200g unsalted butter (room temperature)
  • 400g icing sugar, sifted
  • 4 tbsp Kells Pink Gin
  • A touch of pink food colouring (gel or paste preferred)

To Decorate:

  • Fresh strawberries, halved or quartered

🧁 Let’s Bake!

Step 1: Prep the Oven & Cases
Preheat your oven to 180°C (fan 160°C). Line a 12-hole muffin tray with cupcake cases.

Step 2: Make the Sponge
Cream the butter and caster sugar until pale and fluffy. Gradually beat in the eggs and lemon zest. Gently fold in the sifted flour and salt, then add the milk until smooth.

Scoop the mixture evenly into your cases (an ice cream scoop works wonders here) and bake for 15–20 minutes, or until golden and springy to touch.

Step 3: Soak with Lemon Syrup
While the cakes are baking, gently heat the lemon juice with 70g icing sugar until dissolved. Once the cupcakes are out of the oven, pierce them all over with a cocktail stick and spoon the syrup over each one to soak into the sponge. Let cool on a wire rack.


🍸 Make the Pink Gin Buttercream

Beat the butter until soft, then gradually add the sifted icing sugar. Mix in 2–4 tbsp of Kells Pink Gin, adjusting to your taste. Add a small dab of pink food colouring and beat until evenly tinted.

Pipe a generous swirl onto each cooled cupcake using your favourite nozzle (we love a classic 1M swirl!).


🍓 Time to Decorate!

Top each cupcake with a fresh strawberry slice and voilà – you're ready to serve! Perfect with a glass of Kells Pink Gin & Tonic on the side.

COCKTAILS AT HOME STRAWBERRY DAIQUIRI 
Bit of history and facts:
Daiquiri is also the name of a beach and an Iron Mine near Santiago de Cuba 
The drink was supposedly invented by an American mining engineer named Jennings Cox, who was in Cuba at the time of the Spanish-American War. It is also possible that William A. Chanler, a US Congressman who purchased the Santiago iron mines in 1902, introduced the daiquiri to clubs in New York in that year. 
Originally the drink was served in a tall glass packed with cracked ice. A teaspoon of sugar was poured over the ice and the juice of one or two limes was squeezed over the sugar. Two or three ounces of white rum completed the mixture. The glass was then frosted by stirring with a long-handled spoon. Later the daiquiri evolved to be mixed in a shaker with the same ingredients but with shaved ice. After a thorough shaking, it was poured into a chilled coupe glass.
A wide variety of alcoholic mixed drinks made with finely pulverized ice are often called frozen daiquirí. These drinks can also be combined and poured from a blender, eliminating the need for manual pulverization, and producing a texture similar to a smoothie. On larger scales, such drinks are often commercially made in larger machines, and come in a wide variety of flavors made with various alcohol or liquors
